Orange/Ginger Glazed Chicken Thighs
Ingredients:
4 Chicken Thighs, fresh or frozen (thawed)
1 Navel Orange (washed and wedged)
1 Onion, sliced
2-3 Tbsp. Olive Oil
Ground Ginger (about 2 tsp, or to taste)
Sea Salt
Fresh Ground Pepper
Instructions:
Heat oil in pan. Place chicken in pan and surround with
onions. Sprinkle with ginger (half), salt, and pepper. Cover and let cook for
2-3 minutes.
Turn chicken, stir onions. Sprinkle chicken with more ginger,
salt, and pepper. Squeeze the juice of most of the orange wedges over the
chicken and onions (save one for later). Place the squeezed wedges into the
pan, evenly spaced.
Allow to simmer, uncovered, until the chicken is cooked and
the juices are caramelized. Squeeze the last wedge over the chicken.
The Results:
This was so sweet that we slowly savored every bite! We even
ate the wedges (the rind was tender and could have been eaten as well). My
husband loved it as much as I did! I am planning to double this recipe next
time, and I’m sure it would be just as good with drumsticks.
(I did not take any pictures, which is totally unlike me.

**Note: On doing some research, I have determined that we could have eaten that rind, especially because it was tender from cooking. Any for anyone who might be concerned, yes, I washed it before using it.
